2020 Toyota Corolla 67,000 miles. I saw Scotty video about a week ago that caught my attention about rear brakes in general with modern electronic parking brakes. There was emphasis on the possibility of needing expensive scan tool to unlock rear brakes if doing brake work. When I’m in park, rear Toyota brakes automatically engage. If I want to replace rear brake pads, could I just leave the car in neutral, so they won’t engage, or are there other hidden electronic dangers?

No, you can't just do that. It could engage while you're working on it. Crush your fingers
