Saw a video where the mechanic (on a Camry no less) dropped pan, changed filter then over filled the trans. Took off one of the hoses from the cooler, started car and stopped when the new fluid came through the cooler. Used about 10 quarts. Sound good?

Should be perfectly fine as long as the fluid is adjusted to the correct level afterwards.

No. It sounds rednecky.
Most people do not require flushing of any kind.
