Truck running hotter than normal

Hello all, I have a 2000 Chevrolet Silverado, 4.8 V8, 4speed auto, 155,000 miles

My truck seems to to be running hotter than normal(210)on highway (what the gauge shows), I have replaced the water pump, upper and lower radiator hoses, heater core hoses, thermostat, flushed the cooling system the fan clutch is good, radiator is good. Is there something wrong or something not reading correctly

The 24-year-old (if original) temperature sensor for the gauge may be out of specification. Those are usually thermistors that change resistance with temperature. The shop manual should have specifications for what the values should be at a range of temperatures.
