I’m an over the road truck and my 2019 Tundra 5.7L V8 sits for up to six weeks at a time. In a year i won’t reach 3k miles. How often should i do oil changes and other maintenance for my truck? Want her to last for as long as possible without issues.

The oil should still be changed once a year. The owners manual should give time/mileage, what ever comes first, for many other maintenance items.

I agree with OG.
Contemporary owners manuals are huge; they often have maintenance info fragmented across multiple locations. But I seem to recall my ‘14 tundra had a schedule in there somewhere that listed service by both date and miles. 
If not, I would change the oil at least once a year and the other fluids at least every 5-7.
