I have a 2016 4Runner, but I may need something bigger. Will a new Tundra be as reliable? Anything to worry about with the eight cylinder?

There isn't anything wrong with the Tundras. They last for a very long time.
The 2021 Tundra is a forever truck. Keep it oiled and you’ll likely never need a new one. (Traditional Tundra fans are very unhappy that the ‘22 is going to a turbo-6, though that will probably be almost as reliable). If you ever do change your mind, I can pretty much guarantee you’ll get your money back out - resale is insane on those things.
Things to watch for: the starter is located deep in the middle of the motor, so replacing it is a major task. Fortunately it will be a while before you have to do it, and if you use OEM you’ll probably only do it once.
