Just got a 2025 rav4 at the end of July - live in NJ where it does snow fairly a good amount and salt and brine is used heavily on the roads even when ice and snow is mild - should I fluidfilm my car’s undercarriage?

Well that's actually coated pretty well but I would definitely have the salt rinsed off it many times. Find a local car wash that does monthly car wash plans and taking in a lot to have it rinsed off in the winter
