Should I be more focused on trying not to buy a used car that's super old or focus more on millage or both? How old is too old ? and how many miles is too much ?
For example resently came across a 2013 honda civic coupe with only 2725 miles.. Is something that old as well as that old with nearly no miles too risky of a gamble ?

Well, mileage is actually the most important. If you're talking about relatively recent cars, you don't really have to worry about age if you're buying a good car like a Toyota Honda unless it's 25 years or older

It depends on alot of factors, but what GEW said is a good benchmark. Come back & check with the form when you find something for some opinions. Its also always a good idea to have a pre-purchase inspection done by a knowledge, independent mechanic too.
I would pass on that Honda with 2275 miles, it probably has alot of little issues just from not being driven enough.
P.S. When learning stick, start off by focusing on only the clutch pedal. Slowly, very slowly release it, get used to how it feels. Don't even bother with the gas pedal at first. That's how I taught myself.
