What is your opinion on LS engines. Do they deserve the hype?

LS is like a B52 Bomber. Old technology, obsolete, there’s newer and better out there. But hey, it runs and is reliable overall.
It is a proven platform.
Are they worth the "hype"? Well, if you want to make big power somewhat cheap and on a reliable motor, they are the way to go.
Every build is different, and depending on the end goal an LS motor may or may not accomplish what you are trying to do.
I just finished building an '04 GTO with a stroked/cammed 403ci LS stroker motor. Naturally aspirated and with other modifications but zero forced induction or nitrous, it makes 550HP to the tire on 93 octane pump gas. Hard to beat that kind of bang for the buck.
