What is written in manuals?

it says the best oil for this car is 5w30, but the service uses 0w20...

At dealership? I had the same issue. They said they have been used 5W30 but manual says 0W20, and yet they tried to convince me I'm wrong. I stopped using their services anyway. As advised by Kaizen and Justin, make yourself familiar why they are doing it and let them prave it their statements.

Check if there is an updated spec for your car.

Some cars get an updated spec. For example, with Toyota engines, many cars after a certain year could use both 5W-30 or 0W-20. That happened with my 2004 Prius. It was rated for 5W-30 and was freaking out when they put 0W-20, but it was an updated spec so it was fine.

When in doubt, use what the manual says. But if an updated spec is available, it should be fine.

the cars idle is rough, pinging knocking etc...the knocking is available only when the car is warmed up

Go with whatever the owner's manual says. There may be a Technical Service Bulletin with updated specifications, but your owner's manual is your #1 go-to. You're guaranteed to not have engine engine problems over the long-term if you stick to factory specs. My 1999 Ranger had a TSB recommending a switch from 5W-30 to 5W-20 many years ago, when I accidentally put the wrong oil in the car (my 2017 Mustang takes the lighter oil). I only put 3,000 miles on it before I changed it again. I'm a little freaky about that, though.
