got a 2016 Civic 4 door and I cracked the windshield pretty bad changing the wiper blades (huge fail...I know LOL) Anyway I got multiple quotes from different companies for $300 and then one company qho quoted me $165 to replace the windshield. Would it be a bad idea to take the cheaper quote or does it really matter?

its possible the 165$ job is going to be using a windscreen taken out of a scrap car, just double check. there are a few "independent" window replacement crowds here in Ireland that try and pass off a used windscreen as "reconditioned" or "refurbished" when in reality its been bought that morning from the dismantlers yard for 25€ and given a wipe of a flannel to make it shiny

I would not cheap out on a windshield because you kind of get what you pay for. You don't want cheap glass with a poor sealing job and having water drip onto your lap.

Yea, Ive already decided not to cheap out and have made an appoinment so Im sure it will be done right.
FWIW when I need glass, paint or body and fender work done, I check with my insurance agent - they arrange for dozens of fixes every week, so they know who is good and reasonably priced in your area.
