Dear Scotty I have a 2018 4runner 4.0l v6 automatic. I change my oil every 5000 miles with 0w20 but should I switch to 0w16 to avoid the oil dilution problems that some GDI engines have?

Personally I'd stick to what ever the manufacturer recommends for your region.

The factory maintenance manual should tell you what viscosity to use per your region, as Jimbob states above.
