My 2011 Toyota Corolla makes a rattling noise sometimes when idling in park or accelerating from a stop. I believe it is the heat shield as 2 of the bolts are no longer holding it in place. Should I try to reattach it? Should I just remove the thing? Any advice is appreciated.

If it's not rusted, well, yes, reattach it. That's preferable to removing it.

Yeah, Toyota puts on logos and chrome strips for looks - those are optional. They did not put on a heat shield just for looks, there's a reason the car works better/more reliably (or won't start grass fires).
