Just had my parking brake replaced along with the rear rotors calipers and pads, I was driving and ran over a big stick and my car was at ~2500 rpm to keep up a 55mph so it doesn't feel like its running right. Are the calipers supposed to look like this?

I don’t see anything obvious there. But it’s easy to check. Jack it up with the parking brake off - make sure the ground is level and the car well-chocked. See if the wheel spins freely all the way around. You can also take the tire off and inspect the rotor. You can also pop the pads out to inspect for damage (lots of YouTube videos show how to do this- faster than trying to explain). If you have a long-handled socket wrench and a torque wrench, you can take apart and reassemble Subaru brakes pretty easily.
with the tire off you can also inspect the rear suspension, etc for any damaged parts.
