I recently got a Ford Taurus, it's a police interceptor version and I performed a mod to replace it's cluster with the civilian cluster, they are different and it has the actual screens. The mileage is off a way ton, how can I correct the miles on my new cluster? The true mileage right now is 124,182 miles.
Find a cluster in junkyards that has close mileage to the current one.
Companies that rebuild clusters can also program them with the correct mileage. Search around for them might get lucky and have one nearby otherwise you’ll have to ship the cluster and be unable to drive it while it’s being programmed.
Since it’s a Ford, Forscan might be an option. you can only change to a higher mileage than the replacement cluster reads, you cannot decrease the mileage.
here’s a link to a video of someone doing this in an F150

If you want to try it yourself, be sure to read all the cautions with Forscan. Editing the wrong field in the as built data can turn your car into an expensive paperweight until you figure out and undo your mistake.
