Hi. We currently own a 2017 VW E-Golf but since we have two small boys the car quickly proved to be too small. The range and charging speeds are also not ideal for long trips and the out of warranty cost looming in the future are also something I think about more and more lately. We bought the car new and we've had very little to no problems with it for now but since the warranty will soon run out, plus we'd need something bigger I started eyeballing the Chevy Tahoes (2000-2006 model year) as an alternative.
Would it be a wise decision, in the long run to switch to an obviously older, used car like the Tahoe or am I just gonna' shoot myself in the foot here by doing that? If maintained properly will it be a RELIABLE alternative for a family of 4 with lots of baggage and who likes to travel a lot?

I would go with the Tahoe. This was a transition year for that vehicle. I would just make sure the engine DOES NOT have the Active Fuel Management system.
GMT800 didn't have active fuel management systems as far as I know. That became a thing with the next, third gen GMT900-s.
