I have a 2017 Hyundai Elantra with now 89,127 miles on it. I’ve put already 8,000+ miles since buying it back in March. The car shifts and drives fine, but I don’t see any service for a transmission fluid change from the previous owners. The maintenance says to change it every 35,000, and with it now missing two changes, I’m concerned on changing it. Should I use OEM fluid and only do one drain & fill? I’m 19 and I’m driving a lot and want to keep the transmission worry free

yes do that.
But this tranny will never be worry free. It's a Hyundai.
