Wife took 2018 Escape for oil change and they apparently way overfilled with new oil. She got on freeway and car started smoking real bad. She pulled over and called shop. Manager came out and drove car back to shop where they supposedly drained and refilled oil. Total driving out and back about 7 miles. How can I tell if any damage done?
Any damage would likely be to engine seals. Keep an eye out for oil dripping from the engine.
How can I tell if any damage done?
Sometimes, the damage is premature wear inside the engine where you can't see or detect it.
If the engine is overfilled enough, the oil can get whipped up into a froth which then starves engine parts of oil. The crankshaft which is supposed to float on a layer of oil can make contact with the bearing surfaces.

In this video which is primarily about comparing budget vs. premium oils, overfilling an engine is tested to check the effect on oil pressure and power output:

You could elect to have a sample of engine oil analyzed before your next oil change to see if there is any indication of excessive wear.
