Honda S2000 if you can find in that price range.
Mustangs are good too.

Look around for any good used Mazda MX-5 Miata 6MT or Honda Civic Type R (FK8)
Ford Mustang? Pick the One with V8 Manual Transmission, not with the junky 2.3L EcoBoost Engine
1st Gen Honda/Acura NSX with Manual Transmission, if you can find it from any estate sale or elderly person
