I drive a 2002 toyota tacoma, I plan on doing a suspension lift of about 2.5inches, what would be the best way of leveling the rear. I dont plan on towing anything but I do plan on going offroading.

usually lift kits will include either axle blocks, adjustable shackles, or a new set of deeper springs for the rear.

Get height adjustable front coil over shocks with proper spring rate on them.

rear shocks + proper leaf springs/ coil spring can lift your truck.

For the leveling would you eliminate stock rake( front is lower than rear)?

for shock absorbers I recommend you get ones with remote reservoirs, more oil in tubes can prevent over heating.

The capacity of coil springs / leaf springs depends one how heavy is your truck, any additional weight?(steel bumpers, winch, spare tire mount, side owning, tent on top, full under body amour, rock rails, other overlander builds in/on your truck bed...)

Rear spring shackles would be the easiest.
