I have a 2020 Toyota Camry 2.5L 4 cylinder. About a week ago I was driving and when I would accelerate fast the car felt like it was hesitating the whole way through the rpm band. When I would floor the car would go through the rpm band all the way to around 6k and and wouldn’t shift up to the next gear even if I was using the paddle shifters. I check My codes and have code P1400 and it appears as if it could be my sub throttle sensor. Does anyone know if that sounds right?
Isn't it still under warranty? Let the dealer take care of it.
My car is tuned and I am out of warranty because of my mileage
If the car is no longer stock it could be almost anything, but if the code is accurate you need to replace the sub-throttle position sensor, or fix the wiring if it's a wiring fault.

How would I know If it is the wiring or the sensor itself?
On a car that new if there's a wiring problem it would most likely be in or near the connector for the sensor. You could even try reseating the connector to see if it helps. To really check the wiring though you would need a wiring diagram and check for continuity from the sensor to the computer module it connects to.
