I had a new car that it had Start Stop. I had issues to remember to turn it off manually every time I started the car. I just unplugged that cable from the battery and it was disabled. I didn't know it was illegal to do. But eventually I got tired of an unreliable new car. So many issues because of the electronics. I traded it in and bought an older car that is way more reliable.
