You don’t know what else may have been effected due to collateral damage from the head gasket failure. I would walk away.

If they are so confident that the work was done correctly, what kind of warranty are they offering? No warranty, no sale.
For that matter, what kind of "dealer" is selling a 22-year-old Camry, and what kind of "certified" mechanic do they have on staff? It would not suprise me to find it's some bottom-feeder gyp joint whose "certified mechanic" threw some sealer into the cooling system to "fix" the leaky head gasket.
