I currently own an 11 sonata limited. and I use it daily for work so i put a lot of miles on it as I do gig work.
Costco sells full synthetic oil for a very good price and it isn't high mileage.
I haven't noticed any oil leakage so far, but I guess my model is notorious for oil leaks
I plan on doing oil changes every 3k and maintain my car seriously. and I drive maybe 60% highway 40% streets miles
so my question is would the cost benefit be worth it paying more for a high mileage oil going forward versus a full synthetic if it stops my car from burning oil?

No, not really. IMO There's been a few interesting tests on YT regarding this but there's little 'real world' evidence to support that claim. Any name brand GF6 full synthetic oil (along with more frequent oil changes) is going to protect your engine just as well. I've never seen any evidence to the contrary.
