Scotty,
I have 2002 Chevy Silverado 1500.
There is a gurgling and whining noise in the dash. The whining noise goes away when I get up to highway speed.
What the heck is this?

check your coolant level in COLD not hot (you will burn yourself and its in pressure)
Gurgling noise is most likely air in the system. The noise sounds like belt noise. The correlation could be leaking water pump dripping on belt overnight contaminating belt and allowing air into the cooling system causing gurgling noise. and whining noise could be water pump failing or belt is slipping on the water pump
