Trying to find the ignition & my car alarm cables to disconnect the alarm but I’m not sure which one to disconnect I’m trying but I don’t think I’m doing it right?! Help please

Maybe locate the alarm module under the dash and see if you can use the info on it to lookup the wiring diagram/installation guide.
For an older aftermarket alarm system and IF it was installed professionally (correctly) you should be OK with just unplugging all the connectors on the alarm module.
If there's a separate Can Bus interface module that's part of the aftermarket system unplug that one too.
I don't see any reason to cut out all of the alarm wiring harness if you aren't installing another alarm.
