My son has an 06 Chevy Impala LTZ 277,000 miles. Today on the interstate the console told him " Low oil pressure, park car" It was on for about a minute he said and then went right off. The oil had not been changed in a long time. So I took it to our local oil change place to have it changed. The light has not come back on since. Should I worry? Or just replace the pressure sensor?
Verify what the oil pressure actually is with a mechanical gauge.

The oil was 18 months and 30,000 miles old. I have drove it all over tonight and it seems fine. I might replace the sensor because it is not that hard to do. My wifes car did something similar and it just needed an oil change even thought it was at 3000 miles because she does not drive it much
I wouldn't suspect the sensor. I would suspect the 30k old oil that probably looked and flowed like tar. I wouldn't expect the engine to last very long with that kind of owner. Your son needs a lesson in taking care of his belongings.
Your wife's oil probably looked like mayonnaise. He car just needs to be take for a good long, brisk drive to get it nice and hot.
