My toyota harrier 2003 3.0 is overheating.

Hello everyone, I'll be honest here, I'm not good with cars mechanically.
I recently restored a Toyota harrier 2003 3.0, the one with the 1mzfe and I'm experiencing an issue where it overheats underload. 
I can drive it under 60 km/h (40 mph.) perfectly fine but if i go a bit over, car suddenly starts heating up. 
I've gotten it inspected, different mechanics tell me different things.
One states my gasket had leaked, but other mechanics state it's a radiator issue.
I have repaired the radiator, repaired the gasket even and still my car overheats underload, I'm guessing it's an issue with the thermostat
