Can I drain my watery oil and antifreeze and retighten down My headphones and gasket or do I need to take it all apart start over

If the new head gasket is leaking, either it wasn't installed correctly, the head wasn't torqued down in the correct sequence or to the correct torque, or the head is warped and needs to be resurfaced before re-installing it.
You did not specify what engine you're working on. Most engines that use cylinder head bolts are one use only, that means you must use new cylinder head bolts or ARP studs with the new gasket. The old bolts cannot be used.
