Since Toyota is having issues with its Tundras and Tacomas, what is the best new truck to buy for mid-size and full-size trucks?

full size, probably a 1-ton Ford depending what you need it for. But they're still full of unreliable electronic crap.
If you don't actually need a truck then it's better to buy an SUV. At least you won't need to spend over $100k
