I have two 2019 Ford Fiestas. One at 70k and the other at 90k miles. Recently both of them had a check engine light for the code P0496 which is something to do with the purge valve. Took to a big chain repair shop and they said it’s a “dummy code” and as long as I don’t notice any significant changes i should be fine. I would honestly rather have it fixed and am willing to take it to a personal mechanic but Id like some advice. Should I bother?

It is not a "dummy code". The computer detected a problem that could affect engine performance. Don't go to chain shops. Follow the troubleshooting here.
