I bought a 2015 Ford F150, 5L, 6 speed manual transmission with 102,000 miles (162,000 km) and I don’t know the history of the truck. Is the mileage to high at this point to change the transmission oil? Will I do the transmission harm? Many F150 owners tell me to change the oil & filter but do NOT flush the transmission.
Same thing with my 2018 Ford Explorer that I just purchase with 3.5L, 6 speed transmission with 96,000 miles; should I change the oil and filter and NOT flush?

There is no such thing for manuals. They have dry clutches. Change the gear oil any time.
There's nothing to flush either. Just drain & fill.

1- Never flush an automatic transmission. You risk forcing debris into the valve body.
2- Changing anything about a never serviced high mileage transmission is risky. It's the owner's gamble.
