2014 Chevy Silverado 1500 5.3L V8
should I change the fluid? The truck has almost 150k miles or should I leave it alone? Is there any risk if I change it?

On a 150k vehicle, if you don't know when fluids were last changed, do it now - oil, coolant, brake fluid. When fluids get contaminated or the additives wear out, things like master cylinders and radiators and such that are a lot more expensive/hassle will need attention.
I’ve had the truck since new I didn’t buy it used I’ve just never changed the coolant

It's radiator coolant. Do it NOW.
