Toyota avensis 2.0 petrol 2004y. when the car is cold the steering wheel turns softer, when heated it hardens, changed hydraulic oil with castrol ATF dextron 3, but the difference is minimal, the old oil was black.

Does the car make a whining noise when you turn the wheel left or right? If so it could be a power steering pump issue, or in worse case scenario heat makes fluids break down their lubrication purposes over time and if not changed in a timely manner it could of worn out your steering rack

I would try to get all the old fluid out and put in full synthetic power steering fluid it flows best that doesn't help it may need very expensive parts like pump or rack because black will ruin them inside
I have already changed the fluid with a new Castrol ATF
