I have a 2000 Toyota Camry 2.2 L four-cylinder, with 127,000 miles, not sure if the transmission fluid has been changed or not, but I am considering changing it because of low mileage, I’ve changed all the other fluids and things are great, but want some input on changing the transmission fluid would be appreciated.

Did you check your transmission fluid color?
If the fluid isn't burned / chunky / smelly - it should be alright.
