How do you fix a jerking transmission in a 1999 toyota 4runner it has 321,200 miles i don't know if it has had the fluid changed

At that mileage, you probably don't fix it.

Too many miles. Live with it or swap the transmission if you can’t.
a new transmission would be worth more than the car

then what? a used junkyard one with different problems?
