My car is 27 years old. I drive a couple of hundreds of miles every year. Otherwise it sits in a dry garage. The car drives and shifts perfectly. Should I change the oil every year too? What kind of other maintenance should I also do?

Yes, change the oil every year or every 5000 miles, whatever comes first. Also just make sure all of the fluids are filled to the correct levels.

Well, … you must like your car! Yes? I suggest, than, … just perhaps, drive it a bit more? Enjoy it more often? Driving it should be a part of a regular maintenance, … just like fluids changes, lubrication, small adjustments ‘n such.

Take it out for a solid drive every month, or let someone else do it.
