Can't select gears

1991gmc sierra 5.7 manual 5 speed 191kmiles , shifter went limp and completely neutral and cat shift into any gears , what could be the problem?

Have you checked your shift linkage? Something probably came apart after 35 years.

Where  could I see that linkage ? Removing the standard stick shifter?

Since I've never worked on one of those trucks I have no idea. You might find information on the shift linkage in a repair manual, the following shows the shift linkage adjustment on a GMC 1500 series pickup:

That's for column shifter. The five speed probably has a floor shift:
