I have a 1984 300ZX and it keeps draining batteries when turned off completely, I have to always unhook the battery when it's not in use cause it always has something draining. It's not the interior light or anything obvious. Can anyone give me any help as to how to start troubleshooting this issue?

First hook up an ammeter between the negative battery terminal and negative cable to get an idea of how much power is being drained. Then pull the fuse on each circuit in turn to see if the drain ceases. It's also possible for a bad diode in the alternator to pull current when the car is turned off, to test that you'd disconnect the alternator wiring.
