2000 Pontiac Bonneville SSEi Supercharged

Despite its age, this car runs relatively great.
However, sometimes if I accelerate too quickly (gunning it) the car seems to become disabled: my accelerator ceases to do anything, I lose power steering, and the battery symbol flashes on the dash.
I pull over, restart the car, and it’s good to go.
The battery is only 3 years old.
The mechanics I’ve taken the car to either (a) can’t replicate the issue or (b) can’t identify what’s causing the issue
Any help would be much appreciated!

A 3-year-old battery is not necessarily good. Have the battery and alternator load tested.
Did any of the mechanics get a snapshot of live data when the problem occurs?
