Do cars still have a break in period? If so, does it differ for ICE, Hybrids, and EV’s? What is the break in period and what are the do’s and don’ts?

Break in periods don't really matter anymore unless you are legitimately building your own engine from almost ground up. For the common everyday car. No it doesn't matter.

If there is any particular thing you need to do it should be mentioned in your car manual.

No real break in periods anymore. As @BruceREE said, you only have to worry about that when you get into custom motors.
