I was always told growing up that electricity and water don't mix. But I read an article today that said electric boats are apparently now a thing. What happens if it takes on water? And what about electric cars that get flooded out? Why is nobody questioning this? Seems absurd to me.

of course the batteries would be toast after an event like that.
and by the way boats take on water all time. It just drains right back out.
It would be smart to mount the batteries above the water line. Below that the water is constantly being pumped out. So the boat would have to capsize completely for the batteries to get submerged, and even then you could put them in a water tight enclosure.
Very complex answers to those questions.
Suffice to say that many people have spent a lot of time on research and development to make sure the products are safe.
A wet EV car or boat will do the same thing - nothing.
