What all has to get changed if I change a v6 engine to a v8?

Depends on the make/model/year of vehicle and the engine it has and what engine you want to swap in. Much, much, much more information is needed.

With modern cars, the swap is extremely difficult and involved. Unless you plan on keeping the car literally forever, it doesnt make sense to do.
