I am doing a Barra engine swap into a 1970 Mustang. The Barra engine is from Australia and has anywhere from 31,000 to 112,000 miles. I am using a ZF6 automatic transmission. Since the combination is out of the car, what maintenance items should I change prior to installation?
I am thinking the front and rear seals, and valve cover, oil/transmission pan gaskets.

Sounds like a good plan. The ZF transmissions have the pan gasket and filter built into the fluid pan, so you would just replace the whole fluid pan. And do an ATF change too while you're at it.

The above sounds fine. If it was me, I'd do a wet/dry compression check on any engine before I put it in, just in case.
