I am the original owner of a 2015 Honda CRV Touring with 49K miles. It is mostly a suburban grocery hauler with about a half dozen highway trips/year of a couple hundred miles each. Despite the low mileage, but given its age, should I change the fluids: coolant, transmission, brake, rear differential, etc.?

If you want to be safe, I would do all of them except the rear differential. Usually you don't need to worry about that until around 90k miles.
