Looking for a reliable sedan where maintenance is relatively easy and MPG is good, so I know it's going to be in the Toyota/Honda/possibly Mazda(?) family. I don't want to spend an arm and a leg, so I won't be buying new (will be looking between 2016-2022 most likely). Any specific years and models I should avoid or under-the-radar deals?

As this kind of question is asked here repeatedly you might want to use the site search function, and also check the section "Vehicles Reviewed by Scotty".

You can get an idea of failure trends for specific models and years at sites such as carcomplaints.com. (Drill down into each category for specifics.)

@chucktobias thank you!
