What should the normal operating temp be when my 2005 Chevy equinox is warmed up. Right now, it stays right at 185. It may top 190 going uphill. Is this normal? Or, too low?

195 to 225 degrees is the typical operating temperature for most vehicles.
Over 235 is overheating, and over 245 damage may occur.
I would check for a stuck thermostat. That may be why you are running a bit cooler temperature.
