When I was younger (1960's), I was told that to remove built up carbon in the engine, you would need to take a run at speed to "blow the carbon out". Is that a valid attempt, or do we need engine tune-up chemicals now?

That's called Italian tune up. Still valid.

The Italian tuneup is still far better than any chemical treatment.
