In this video, Scotty suggest just spraying the throttle body to clean up the carbon build up. But when you spray it, where does the carbon go? It seems like it would get stuck up in the engine? It doesn’t just disappear, unless the cleaner vaporizes it?

So just spray the cleaner and that’s it. You don’t need to wipe anything up. It all goes out the tailpipe eventually.
If that is the case, I did it wrong last time I cleaned the throttle. LOL.
I hate to use this as an analogy, but it's the closest thing that came to mind ....
Sometimes you need a toilet brush to help break things up so they flush away easier.
The point is to get the garbage OUT of the throttle body where it can cause problems.

That being said, if you have the time then why not take throttle body out of the car and clean it that way. Then you can properly access it from all sides to give it a thorough cleaning, and you make sure the junk doesn't end up deposited back on your engine parts (the intake , valves, etc.).

I’ve seen it done three ways in videos.
1) Like Scotty does, just spray.
2) Like you suggested, take the throttle body out and give it a thorough clean.
3) The way I did mine, got a rag on a stick, sprayed some cleaner, and all the build up away. Also sprayed it down, but caught it on the rags.
Alas, I think your suggested method is the most thorough. But if Scotty’s suggest method works, the simplest.
I call that "spray and pray".
Whatever works.
Spray the throttle body cleaner on a shop/microfiber towel first, clean the throttle plate and airway and the carbon ends up on the towel. Voila!
