What oil viscocity should I be using

Hi Guys,
I have a 2019 Honda HR-V (1.8L) with 30,000km and I looking to do the oil change myself. The car operates in climates ranging from 20 degrees Celsius (winter) to 50 degrees Celcius (summer). I have attached a picture of the owner's manual,

The ranges are pretty wide so I am unsure which oil to use.

Based on that owner’s manual link you provided, 10W-30 should be fine.  Go with any brand of engine oil that meets the specifications in the owner’s manual.

Change engine oil and filter every 5,000 miles or 8,046 km.  Also, change transmission fluid (and filter if applicable) every 40,000 miles (or 64,373 km) if regular automatic transmission or every 30,000 miles (48,280 km) if a CVT.
