Old hybrids are a poor choice since as they age they are likely to require complex, expensive repairs. A 2005 model is 16 years old going on 17. Also the Honda hybrid system of that time was not nearly as good as Toyota's.
A 2005 Honda Civic with conventional drivetrain on the other hand could be very good if a mechanic verifies it is in good condition.

Between 2021 Corolla and 2021 Camry, test drive both and see which you like better. Be aware that long term reliability is unproven for both since they are new.
Both vehicles’ engines come with a naturally aspirated I4 (a good thing) - no turbos. The Acura ILX is based on the Honda Civic Sedan. However, the 2021 Honda Civic LX comes with a 2.0L 158 hp I4 engine with port injection only (a really good thing and extremely rare these days!) - so not susceptible to carbon buildup on the back of the intake valves over time (which equates to one less maintenance, worry, and $$ to mitigate/clean for you) with a CVT transmission. The Acura ILX meanwhile comes with a bigger displacement 2.4L 201 hp I4 with direct injection only (which means it is susceptible to carbon build up over time, need catch can to mitigate - one more maintenance item to watch and clean out - and you might still have to clean the back of the intake valves every so often). It is also mated to an 8-speed dual-clutch transmission. For longevity and lower cost of ownership (you didn’t say how many years and miles it needs to last you) go with the Honda Civic LX (realize also that with Acura - being a luxury brand - that maintenance/repair/parts will generally be higher than the non-luxury Honda counterpart). If you don’t plant to keep the vehicle for that long, then go with whichever one you like more (esp. after a test drive).

Stick to a regular gas Honda Civic. They will last longer than the hybrid version, and more mechanics can work on regular gas vehicles over hybrids. Regular gas vehicles have enough complexity as it is; going hybrid adds to that. Even with Toyota Hybrids (which are the best designed and also the benchmark for hybrid reliability/durability) can “only” go 150,000 to 200,000 miles (generally, even a little more) before battery replacement or something in the hybrid system needs repair and that will cost $$$. Also, finding a competent mechanic that knows how to work on hybrids will be a challenge and being a specialty expect to pay more; going to a dealer would be very expensive as well. I would stick to a regular gas version if you plan to keep the vehicle for a long time and put lots of mileage on it.

I would go with the Mazda. Ford has discontinued all their sedans and recent Mazdas are better built than the older ones.
I recommend model year 2017 Mazda 6 with the 2.5L naturally aspirated (NA) engine and 6-speed conventional automatic. That’s been a solid powertrain combo for Mazda. From 2018+ they offered cylinder deactivation in the 2.5L NA engines which I would avoid. Now their turbo charged engines are not bad either (it’s a 2.5L turbo I4), but naturally aspirated is better for longevity. Go with the 2017 model year and save some money in the process. If you have to go newer than 2017, then go with the 2.5L turbo 4.
